We are a casual neighborhood Pintxos and Tapas restaurant. We have a wide selection of food, wine and Gin Tonic. We pride ourselves in serving basque-inspired meals, using high quality ingredients. We currently have three branches - one in Alabang, one in BGC, and one in Salcedo Village.

CHEF DE PARTIE / BRANCH HEAD CHEF
Reports to: Kitchen Manager
 
Supervises: Line Cooks, Dishwasher
 
Job Summary:
 
The Head Chef directs and participates in the preparation, seasoning, and cooking of menu items. S/ he also plans and prices menu items, orders supplies, keeps records and accounts, and supervises the kitchen team of the branch. The Head Chef will also prepare, season, and cook dishes in the restaurant.
 
Duties and Responsibilities:
  • Leads and organizes the kitchen stations to ensure each is prepared with their par stocks for the shift;
  • Monitors the preparation of food and ensures it is dispatched correctly and in a timely manner;
  • Plans, directs, and supervises the food preparation and cooking activities of the kitchen;
  • Prepares and cooks foods of all types, either on a regular basis or for special guests or functions;
  • Adhere to the standardized recipes and food cost policies and monitor the compliance of each kitchen station;
  • Works with the Production Manager to interpret the sales trends into production requirements to ensure that food preparations are not under or over estimated;
  • Determines production schedules and staff requirements necessary to
    ensure timely service delivery;
  • Monitors sanitation practices to ensure that employees follow standards and regulations;
  • Checks the quality of raw or cooked food products to ensure that standards are met;
  • Estimate amounts and costs of required supplies, such as food and
    ingredients;
  • Instructs cooks and other workers in the preparation, cooking, garnishing, or presentation of food;
  • Inspects supplies, equipment, and work areas to ensure conformance with established standards;
  • Orders or requisitions food or other supplies needed to ensure efficient
    operation;
  • Checks the quality and quantity of received/delivered products;
  • Arranges for purchase, repair and maintenance of equipment;
  • Recruits, hires staff such as cooks and other kitchen workers;
  • Manages performance of kitchen team and ensures they comply with code of conduct of the company, administers employee discipline as
    necessary;
  • Collaborates with Executive Chef and Kitchen Manager, along with other personnel to plan and develop recipes;
  • Prepares reports as necessary;
  • Any other tasks that may be necessary or assigned.
Job Requirements
  • Work experience in a head chef or saute chef role with employment at a Spanish restaurant a plus;
  • Proven expertise in developing, standardizing and costing out recipes;
  • Proficiency in ServSafe, or other food safety practices and guidelines endorsed by the FDA of the the Philippines;
  • Track record in proper execution of menu items of all stations;
  • Ability to plan, lead, organize and manage a team.
Physical Demands
 
The employee is required to stand for long periods as well as walk, bend, lift, and stoop. The position requires working taste buds, ability to smell, feel with fingers and
visually inspect, including close and distance vision. The position requires ability to use arms, hands and manipulate fingers to reach, stir, measure, pour, cut, chop, dice, decorate, etc.
 
Work Environment
 
The work environment can be loud and busy. There are many kitchen hazards such as hot surfaces and liquids, sharp knives, and slippery floors.
